Goat Cheese & Avocado Cheesecake
with Pistachio Crust

What's Needed:
  • 16 ounces of goat cheese
  • 2 large avocados (ripe)
  • 3 whole eggs
  • 1 ½ cups of sugar
  • 1 pinch of salt

    For Crust:

  • 3 cups of panko* (Japanese bread crumbs)
  • 1 cup fresh pistachios
  • 1 egg yolk
  • 2 tablespoons of butter
    *If these are not available, substitute for non-flavored regular breadcrumbs

    For Garnish (optional):

  • Dollop of whipped cream
  • 1/3 of an avocado

    Equipment:

  • Food Processor
  • Standard Pie mold (or metal ring)

    CRUST:
    Add bread crumbs and pistachios into food processor until perfectly mixed (the bread will turn green from the pistachios). Add one egg yolk and mix until the consistency is that of a thick paste

    Place the mixture in a buttered pie mold and set aside

    CHEESE MIXTURE:
    Preheat oven at 375 degrees. Add goat cheese, avocados, 3 eggs, sugar and salt into food processor until they are perfectly mixed - almost liquid. Add the mixture into the pie mold and bake the cheesecake in the oven for 35 minutes.

    Once the 35 minutes are up, let the cheesecake cool in mold for one hour (or until cool). Then take the pie out of the mold and place in the refrigerator for at least two hours before serving.

    Top cheesecake with whipped cream and three thin slices of fresh avocado.

    Serves 10
