Pumpkin Soup Scoozi!
Executive Chef: Freddy Sanchez

Serves: 6 - 8

Ingredients for Soup:

  • 2# fresh pumpkin, peeled and seeded, or 1 cup canned
  • 4T butter, unsalted 2 medium onions, sliced
  • 2T honey 1 t nutmeg
  • 3T brandy
  • 3 cups vegetable stock
  • 2 cups heavy cream (milk for lowfat option)
  • ˝ t white pepper
  • to taste salt, to taste

Method for Soup:

1. If using fresh pumpkin, cut into 1-inch cubes.
2. Heat butter in a large sauce pot.
3. Add onions and saute for about five minutes.
4. Reduce heat and add the pumpkin. Saute 15 minutes for fresh pumpkin, 5 minutes for canned.
5. Stir in the honey, nutmeg and brandy, and heat for two minutes.
6. Add the vegetable stock and cook until the pumpkin is softened.
7. Puree in a blender until smooth, then return the soup to the pot.
8. Add in the cream and Stir pepper, season with salt to taste, and serve.
